Pre-heat the grilling pan.
Slice the eggplants lengthwise. Some prefer it whole, it will just take a bit longer to grill.
Place in grill pan.
Turn them every 3-5 minutes) careful not to burn the eggplants.
Place the grilled eggplants on a plate.
Serve with soy sauce with calamansi. Chili is optional.
