In a medium sized bowl mix flour,salt ,pepper and cayenne
dredge the beef and shake off excess
In a deep skillet heat the oil Brown meat on all sides
add onions ,garlic,brown for five minutes
add tomato paste and small amt of water and cook five more minutes
add 1 cup of the beer and as it boils scrape any bits from the bottom ,pour in the remaining beer and add carrots,covered on simmer about two to two and a half hours till meat is tender,check seasoning and stir occasionaly
COLCANNON
Cook potatoes till tender
cook cabbage till soft
mash potatoes with warm half and half
add butter,leeks season with salt and pepper
add bacon bits and serve with the stew .
