3 x Haddock fillets, cut in half 2 Tbsp. extra virgin olive oil (30ml) 1 x salt and pepper to taste   White wine Garlic sauce 1/4 c. diced Shallots (62ml) 2 1/2 c. White Wine (375ml) 2 x cloves of roasted garlic 3 Tbsp. cool butter , cut into cubes (45ml)

Preheat the grill to medium high heatLightly oil the grill. Drizzle the fillets with oil and season with salt and pepper. Place the fish delicately on the grill and cook for two min per side. White wine Garlic sauce:For Sauce, place wine and shallots in a saucepan and reduce by half. Add in roasted garlic and using a hand blender mix thoroughly. Add in butter gradually and whisk to incorporate. Strain sauce and keep on low heat till ready to serve. Drizzle over haddock.
