1 head endive , cleaned well and chopped
2 oz. white vinegar
2 oz. white balsamic vinegar
4 oz. water

fry bacon to crispness you like. add water to deglaze the pan. add both vinegars. add endive. cover and cook on low until endive wilts and turns dark green. stir during cooking.
