4 fillets of white fish; Hake; Sole, Halibut, Haddock, etc
2 Tbs margarine
2 Tbs flour
1 cup milk - fat free
3 eggs , hard boiled, chopped - if on a low cholesterol diet discard egg yokes
onion powder & pepper to taste
1/2 cup Gorgonzola cheese , crumbled
1/2 cup sour cream - fat free
6 oz pkg baby spinach , washed/stems removed

Preheat oven to 350°F; place fish in a glass casserole.
On stove-top in a saucepan on medium heat, melt margarine, blend in flour then milk, stirring constantly until sauce thickens.
Add eggs, onion powder & pepper, cheese, sour cream and spinach; cook and stir until blended.
Pour sauce over fish and bake for 20-30 minutes until fish is flakey.
Serve over rice.
