1 oil bath
2 endive / chicory

Sauce brandade:
1 kilogram of codfish
400 grams of steamed potatoes
12 grams of chopped garlic
1 sprig of thyme
200 grams of chopped onions
1 liter of milk
2 grams of olive oil
3 bay leaves

Cook the cod in the oil bath at 50 degrees celcius.
Brandade sauce: Place the cod in salt for 1 hour and then desalinate it. Cook in milk with bay leaves to a boil and and then let simmer on side of stove. Make the onion, thyme and garlic sweat in a little olive oil and then add the cod (skinless and after having cut into pieces) and potatoes, let cook for a few minutes and mash with a fork. Mix in the Thermomix with a little milk, strain through a sieve, add lemon juice.
Prepare the spice mixture , crush with a knife.
Bread cod with spices
Dress the plate with the sauce brandade, a few thyme leaves, passion fruit juice (in moderation, just for a touch of acidity), garnish with grilled endive at the last minute
