Make the onion, thyme and garlic sweat in a little olive oil and then add the cod (skinless and after having cut into pieces) and potatoes, let cook for a few minutes and mash with a fork. Mix in the Thermomix with a little milk, strain through a sieve, add lemon juice. Prepare the spice mixture , crush with a knife. Bread cod with spices Dress the plate with the sauce brandade, a few thyme leaves, passion fruit juice (in moderation, just for a touch of acidity), garnish with grilled endive at the last minute
