1 pkg Italian pork sausages , sweet or hot
6 chicken thighs, skinless/boneless
2 Tbs canola oil
2 garlic cloves, crushed
1 Tbs oregano , crushed
minced onions - to taste
1 Bay leaf
1 Tbs lemon juice
1 cup mushrooms , washed/sliced
2 cans (8 oz each) tomato sauce - no salt added
3 potatoes , peeled/cubed
2 carrots , scraped/sliced
1/4 cup peas and/or corn
1 green pepper , de-veined/sliced
Cayenne pepper - to taste

Fill a skillet with cold water; bring to a boil.
Puncture sausages with a knife or fork and add to boiling water.
Cook for about 15 minutes; drain water and cut each sausage into thirds. Set aside.
In a large skillet heat oil, add chicken, garlic, oregano, onion, Bay leaf, lemon juice and mushrooms.
Brown on all sides, about 10-15 minutes.
Add tomato sauce, potatoes and cooked sausages; mix well; add water if needed.
Bring to a boil, cover partially and cook on medium-low heat for about 20 minutes.
Add carrots, green pepper, peas, corn and Cayenne pepper.
Continue cooking (add water if needed) until potatoes are done.
Serve over rice.
